Screening complex aroma profiles in wine: the potential of two-dimensional gas chromatography coupled to High Resolution Mass Spectrometry

Wines are characterized by numerous volatile compounds of different chemistry that play a key role in determining sensorial properties and product quality. A detailed and accurate characterization of the rich, heterogeneous volatile profiles is desirable but challenging. Two-dimensional comprehensive gas chromatography (GC×GC) coupled to High Resolution Mass Spectrometry (HRMS) is a strategic platform to unravel such complexity. The enhanced separation power of GC×GC with thermal modulation, coupled to the unique features of accurate mass data provided by the QTOF detector, shows excellent potential for confident and reliable identification of aroma compounds in wine.
