We are delighted to be joined by Le Cordon Bleu graduate, Virgilio Martinez Véliz, Chef Patron of the world renowned Central Restaurante in Lima, Peru.
Considered as one of the greatest Peruvian chefs in a generation, Virgilio is Chef Patron of several restaurants, including the Michelin-starred Lima in London, his flagship restaurant Central - which is considered to be one of the best in the world by the World's 50 Best Restaurants - and two additional Lima restaurants in London (Lima Floral) and Dubai.
Virgilio Martinez also helped form Mater Inciativa; a group dedicated to travelling Peru in search of unique ingredients which are often incorporated into his dishes, as well as being catalogued for local use and protection where necessary.
As well as other culinary intiatives, Virgilio has supported his wife, Pía León's restaurant's Kjolle in Lima and Mil in Cusco, returning the years of influential support Pía had working at Central. Pía has now too been individually recognised by the World's 50 Best Restaurants as The World's Best Female Chef 2021.
